A delightful Lemon Blueberry Bread combining the tangy brightness of lemons with sweet bursts of blueberries, perfect for any occasion.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with a bit of butter or non-stick spray.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, and then stir in the vanilla extract, sour cream or Greek yogurt, lemon juice, and lemon zest.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the fresh blueberries carefully.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For added flavor, consider using poppy seeds or drizzling a lemon glaze over the top.
