Delightful swirls of lemon and blueberries create these soft, sweet rolls, perfect for breakfast or as a treat.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup milk, warmed
  • 1/4 cup butter, melted
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for icing)

Instructions

  1. Activate the yeast by mixing warm milk, sugar, and yeast in a bowl. Let it sit until frothy—about 5-10 minutes.
  2. Prepare the dry ingredients by combining flour, salt, and lemon zest in a large mixing bowl.
  3. Combine the yeast mixture, melted butter, and egg with the dry ingredients, and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Let the dough rise in a greased bowl, covered, until doubled in size (about 1 hour).
  6. Preheat the oven to 375°F (190°C).
  7. Roll out the dough into a rectangle. Brush with melted butter and sprinkle blueberries, lemon juice, and vanilla over.
  8. Roll the dough tightly and cut it into slices.
  9. Arrange the slices in a greased baking dish and let rise for another 30 minutes.
  10. Bake for 20-25 minutes until golden.
  11. Cool slightly, then drizzle with a mixture of powdered sugar and a little water for icing.

Notes

Store leftover buns in an airtight container at room temperature for up to 3 days, or freeze for up to a month.
