A vibrant and flavorful dish featuring bowtie pasta, tender chicken, and sautéed broccoli in a rich cowboy butter lemon sauce.

  • 8 oz bowtie pasta
  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1/2 cup cowboy butter (or melted butter with garlic, herbs, and lemon)
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the bowtie pasta according to package instructions; drain and set aside.
  2. In a large skillet, add a splash of olive oil and cook the chicken breasts over medium heat until golden and cooked through, about 6-7 minutes on each side. Remove from skillet and slice.
  3. Add the broccoli florets to the same skillet and sauté until tender, approximately 4-5 minutes.
  4. Combine the cooked pasta with the broccoli in the skillet. Mix in the cowboy butter, lemon juice, and zest.
  5. Season with salt and pepper, and toss in the sliced chicken, stirring gently to coat everything.
  6. Serve warm, optionally topped with grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet, adding a splash of water or broth to revive the dish.
