A delightful dish combining tender chicken, savory Romano cheese, and crispy breadcrumbs, enhanced by the bright freshness of lemon.

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Romano cheese
  • 2 cups breadcrumbs
  • 1 lemon (juice and zest)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts well with salt and pepper on both sides.
  3. Set up a dredging station with flour, beaten eggs, and a breadcrumb and cheese mixture.
  4. Dredge each chicken breast in flour, then dip into eggs, and finally coat with breadcrumbs and cheese.
  5. Heat the olive oil in a skillet over medium-high heat.
  6. Cook each piece for 3-4 minutes on each side until golden brown.
  7. Add lemon juice and zest over the cooked chicken in a baking dish.
  8. Bake in the oven for 20-25 minutes or until cooked through.
  9. Garnish with fresh parsley before serving.

Notes

Pair with a light salad, roasted vegetables, or creamy mashed potatoes. White wine can complement the dish beautifully.
