A crispy and flavorful chicken dish featuring a crunchy Romano cheese coating and a bright lemon finish, perfect for weeknight meals or dinner parties.

  • 4 boneless, skinless chicken breasts
  • 1 cup Romano cheese, grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat a large skillet over medium heat and add a drizzle of olive oil.
  2. Combine 1 cup of all-purpose flour with salt, pepper, and garlic powder in one bowl.
  3. Whisk together the 2 large eggs and 1 tablespoon of lemon juice in another bowl.
  4. Dredge each chicken breast in the seasoned flour, shake off excess, then dip into the egg mixture.
  5. Coat each chicken breast in the grated Romano cheese.
  6. Fry the chicken breasts in your preheated skillet for about 5-7 minutes on each side until golden brown.
  7. Let the chicken rest on a plate for a few minutes.
  8. Garnish with freshly chopped parsley and serve with lemon wedges.

Notes

For uniform cooking, you may pound the chicken breasts to an even thickness. Baking option available at 375°F for 25-30 minutes.
