A delightful lemon curd cake that captures the essence of summer, combining sweet and tart flavors for a refreshing dessert experience.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup lemon curd
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, milk, lemon juice, and lemon zest and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool completely before frosting.
  7. Once cooled, slice the cake in half horizontally and spread lemon curd between the layers.
  8. Whisk powdered sugar and lemon juice for the icing and frost the top and sides of the cake.
  9. Decorate as desired and serve sliced.

Notes

Best served with whipped cream or vanilla ice cream. Can be paired with fresh berries for added flavor.
