Deliciously buttery cookies filled with tangy lemon curd, perfect for a refreshing treat any time.

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup lemon curd
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and lemon zest, mixing until well incorporated.
  4. In another bowl, whisk together the flour, cornstarch, and salt. Gradually add this mixture to the butter mixture, mixing until combined.
  5. Stir in the lemon curd until evenly distributed throughout the dough.
  6. Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra lemon flavor, consider adding more lemon zest or a splash of lemon juice. Make sure your butter is at room temperature for the best texture.
