A delightful lemon meringue pie with a tangy filling and fluffy meringue that brings nostalgia and joy to any gathering.

  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup water
  • 3 large egg yolks
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 350°F (175°C). Roll out the pie crust and fit it into a pie dish. Bake until golden, about 20 minutes.
  2. In a saucepan, whisk together 1 cup of sugar, cornstarch, and salt. Gradually stir in the water and cook over medium heat until thick and bubbly.
  3. In a separate bowl, whisk the egg yolks. Slowly pour a small amount of the hot mixture into the yolks, then return everything to the saucepan.
  4. Add lemon juice, lemon zest, and butter to the mixture, and cook until it thickens. Pour this delicious filling into the baked pie crust.
  5. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add 1/4 cup sugar until stiff peaks form. Spread this fluffy meringue over the lemon filling.
  6. Bake for 10-15 minutes until the meringue is golden. Let it cool and serve.

Ensure mixing bowls for meringue are clean to achieve perfect peaks. Consider adding cornstarch for a sturdier meringue.
