Ingredients

  • 1 pre-made pie crust
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup lemon juice
  • 2 tablespoons butter
  • 1 teaspoon lemon zest
  • 3 egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually stir in water and cook over medium heat until thickened.
  3. In a bowl, whisk egg yolks. Gradually mix in a small amount of the hot mixture, then return the combined mixture to the saucepan. Stir in lemon juice, butter, and lemon zest.
  4. Pour the filling into the prepared pie crust and bake for about 10 minutes.
  5. While it cools, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  6. Spread the meringue over the lemon filling and bake again for about 10 minutes until golden.
  7. Cool before serving.

Notes

Pair with freshly whipped cream or vanilla ice cream for an extra treat. Store leftovers loosely covered in the refrigerator for up to 3 days.
