  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup poppy seeds
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) while you prepare the cookie dough.
  2. Cream together the softened butter, cream cheese, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, lemon juice, and lemon zest until well combined.
  4. Mix in the poppy seeds evenly throughout the dough.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra lemon flavor, add an extra teaspoon of lemon zest. Chill dough for 30 minutes before baking to prevent spreading.
