  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 4 large eggs
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Rainbow food coloring
  • 1 cup green frosting
  • Chocolate candies or chocolate shavings for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour your round cake pans.
  2. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract, then gradually add the flour and baking powder until just combined.
  5. Divide the batter into smaller bowls and add rainbow food coloring to each.
  6. Pour each color into the prepared pans, layering from bottom to top.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow the cakes to cool completely in the pans on a wire rack.
  9. Once cool, stack the layers with frosting between each layer and on the outside.
  10. Use green frosting to shape a leprechaun hat on top and add chocolate decorations.

Notes

Store leftover cake in an airtight container for up to 3 days or refrigerate for up to a week. For longer storage, freeze wrapped slices for up to 3 months.
