A rich and creamy cheesecake with a buttery biscuit crust, topped with caramel and chocolate ganache.

Ingredients

  • 1 1/2 cups digestive biscuits, crushed
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate ganache
  • Sea salt for garnish

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a springform pan.
  2. Combine the crushed biscuits, melted butter, and sugar in a mixing bowl.
  3. Press the mixture into the bottom of the springform pan.
  4. Bake the crust for about 10 minutes, then remove and allow to cool.
  5. Beat the softened cream cheese in a large mixing bowl until smooth.
  6. Add the powdered sugar and vanilla extract, mixing until combined.
  7. Whip the heavy cream in a separate bowl until stiff peaks form.
  8. Fold the whipped cream into the cream cheese mixture gently.
  9. Pour the filling over the cooled crust and smooth the top.
  10. Refrigerate for at least 4 hours until set.
  11. Drizzle caramel sauce and chocolate ganache on top before serving, garnishing with sea salt.

Notes

For a gluten-free version, use gluten-free digestive biscuits. Ensure the cream cheese is room temperature for easy mixing.
