A delightful Mango Curd Tart that captures the essence of summer with its creamy mango filling and crunchy graham cracker crust.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup mango puree (fresh or canned)
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Create the crust mixture by combining graham cracker crumbs, 1/4 cup sugar, and melted butter; mix well.
  3. Press this mixture firmly into the bottom of a tart pan.
  4. Bake for 10 minutes, then let it cool completely.
  5. Whisk together mango puree, 3/4 cup sugar, eggs, heavy cream, lemon juice, and cornstarch until smooth.
  6. Pour the mango mixture into the cooled crust. Bake for 30-35 minutes or until set.
  7. Let the tart cool to room temperature before slicing and serving.

Notes

Serve with fresh mango slices or a dollop of whipped cream. Pair with a light, fruity white wine, or iced tea.
