This delectable Mango Curd Tart features a silky mango curd nestled in a buttery graham cracker crust, perfect for summer gatherings.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 large egg yolks
  • 1/2 cup fresh mango puree
  • 1 cup sweetened condensed milk
  • 1/4 cup fresh lime juice
  • 1/4 teaspoon salt
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until fully combined.
  3. Press this mixture into the bottom of a tart pan to form the crust.
  4. Bake the crust for about 10 minutes or until lightly golden. Remove and let it cool completely.
  5. In a saucepan, whisk together the egg yolks, mango puree, sweetened condensed milk, lime juice, and salt over medium heat.
  6. Continue to whisk until the mixture thickens, about 10 minutes.
  7. Remove from heat and stir in the tablespoon of butter until melted and fully combined.
  8. Pour the mango curd into the cooled crust and spread evenly.
  9. Chill in the refrigerator for at least 2 hours before serving.
  10. Garnish with fresh mango slices or a dollop of whipped cream before slicing.

Notes

Ensure to whisk the curd constantly during cooking to prevent curdling. For a gluten-free option, substitute graham cracker crumbs with gluten-free alternatives.
