Delicious mango mochi with a chewy texture and sweet mango filling, perfect for any gathering.

Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 ripe mango, diced
  • Potato starch or cornstarch (for dusting)

Instructions

  1. In a bowl, combine glutinous rice flour, sugar, and water until smooth.
  2. Transfer the mixture into a microwave-safe bowl and microwave for 1-2 minutes, stirring every 30 seconds until it thickens.
  3. Remove from the microwave and allow the dough to cool slightly.
  4. Dust a clean surface with potato starch and transfer the cooled dough onto it.
  5. Gently flatten the dough and cut into small circles using a cookie cutter.
  6. Place a piece of diced mango in the center of each circle.
  7. Fold the dough over the mango filling and seal each mochi tightly.
  8. Dust the finished mochi with more potato starch to prevent sticking and serve.

Notes

Serve with green tea or drizzle with coconut milk for an extra tropical touch.
