A vibrant and flavorsome stir fry that combines tender ground beef with colorful vegetables, seasoned to perfection with Mediterranean spices.

Ingredients

  • 1 cup bell peppers, chopped
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic; sauté until softened and fragrant.
  3. Add the ground beef, breaking it up, and cook until browned.
  4. Stir in chopped bell peppers, sliced zucchini, and halved cherry tomatoes.
  5. Season with dried oregano, paprika, salt, and pepper.
  6. Cook for an additional 5-7 minutes until veggies are tender.
  7. Garnish with fresh parsley before serving.
