A delightful Mint Chocolate Ice Cream Cake that combines rich chocolate sponge cake with mint chocolate chip ice cream, topped with whipped cream and chocolate syrup.

Ingredients

  • 1 chocolate cake mix
  • 3 cups mint chocolate chip ice cream
  • 1 cup whipped cream
  • 1/2 cup chocolate syrup
  • 2 cups crushed cookies (like Oreos)
  • Mint chocolate chips for garnish

Instructions

  1. Prepare the chocolate cake mix according to the package instructions. Once baked, let it cool completely.
  2. Once cooled, carefully slice the cake in half horizontally to create two layers.
  3. Place the bottom layer of cake on a serving plate and spread a layer of mint chocolate chip ice cream on top.
  4. Add the second layer of cake on top of the ice cream and press down lightly.
  5. Spread whipped cream over the top and sides of the cake.
  6. Drizzle chocolate syrup over the whipped cream and sprinkle crushed cookies on top.
  7. Top with mint chocolate chips for garnish.
  8. Freeze the cake for at least 2 hours before serving.

Notes

Ensure the cake is completely cooled before slicing. Let ice cream soften slightly before spreading.
