A delightful banana bread infused with juicy blueberries, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup blueberries (fresh or frozen)
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, then add the egg and vanilla extract.
  5. Sprinkle the baking soda and a pinch of salt over the mixture and mix in.
  6. Add the flour and mix until just incorporated.
  7. Gently fold in the blueberries.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add a teaspoon of cinnamon or nuts. Store in an airtight container for up to 3 days or freeze for up to 3 months.
