Delightful and wholesome bran muffins, perfect for breakfast or a snack, filled with moisture from buttermilk and wheat bran.

  • 1 cup wheat bran
  • 1 cup buttermilk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, mix together the wheat bran and buttermilk, letting it soak for about 10 minutes.
  3. In another bowl, whisk together the brown sugar, vegetable oil, and egg until smooth.
  4. Add the soaked bran mixture to the wet ingredients and mix well.
  5. In a separate bowl, combine the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in raisins or nuts if desired.
  8. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 15-20 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Store muffins in an airtight container at room temperature for up to three days or freeze for up to three months.
