  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  2. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in sour cream and flour until just combined.
  5. Pour the cream cheese mixture over the prepared crust and smooth the top.
  6. Bake for 60-70 minutes, until set around edges but with a slight jiggle in the center.
  7. Turn off the oven and leave the cheesecake inside for 1 hour.
  8. Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

For a smoother top, run a small knife around the edge of the pan after baking to prevent stickiness.
