A delightful no-bake pie combining the crunch of cookies with a creamy filling, perfect for any gathering.

Ingredients

  • 1 1/2 cups crushed chocolate sandwich cookies
  • 1/2 cup unsalted butter, melted
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped cookies (for filling and topping)

Instructions

  1. In a medium bowl, combine the crushed chocolate sandwich cookies with melted butter. Press into a pie dish to form a sturdy crust.
  2. Whip the heavy cream until soft peaks form, then add powdered sugar and vanilla, whipping until stiff peaks form.
  3. Gently fold in the chopped cookies into the whipped cream mixture.
  4. Spoon the filling into the prepared crust, smoothing the top.
  5. Refrigerate the pie for at least 4 hours, or until set.
  6. Before serving, sprinkle additional crushed cookies on top.

Notes

For a richer flavor, use dark chocolate cookies. Can be made a day ahead and stored in the fridge.
