Delightful little bites of fluffy pancake goodness that can be dipped in syrup or filled with sweet summer fruits.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Optional: fruit for filling (banana slices, berries, etc.)
  • Optional: syrup for dipping

Instructions

  1. Preheat a non-stick skillet or griddle over medium heat.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt until combined.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. For each popper, pour a small amount of batter onto the skillet and let it cook for about 2-3 minutes or until bubbles form on the surface.
  6. If you’re adding fruit, gently place a piece into the batter after pouring it onto the skillet.
  7. Carefully flip each popper and cook for another 1-2 minutes until golden brown.
  8. Serve warm with syrup for dipping or stuffed with more fruit.

Notes

Make sure not to overmix your batter for fluffiness. Experiment with different fillings like nut butter, chocolate, or savory options.
