Instructions

  1. Mingle the Ingredients: In a saucepan, combine the apple cider vinegar, water, sugar, salt, peppercorns, and bay leaf. Bring to a boil over medium heat while stirring until the sugar and salt dissolve into the brine.
  2. Prepare the Onions: Place the thinly sliced red onions in a large jar or container. A mason jar works wonderfully here, adding a rustic touch!
  3. Pour the Brine: Once your pickling liquid has reached a boil, carefully pour it over the onions, ensuring they are fully submerged.
  4. Allow to Cool: Let the mixture cool to room temperature before placing the lid on your jar.
  5. Chill Out: Cover and refrigerate the jar for at least 1 hour before using. For the best flavor, let them sit for at least 24 hours.

Notes

These pickled onions can keep well in the refrigerator for up to 2 weeks if fully submerged in brine.
