  • 1 cup pistachios, shelled
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rose water
  • 1/2 teaspoon ground cardamom
  • 1/2 cup milk
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Grind the pistachios in a food processor until finely chopped.
  3. Mix together the flour, baking powder, salt, and ground pistachios in a bowl.
  4. Cream the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the vanilla extract, rose water, and ground cardamom.
  7. Combine the dry ingredients with the wet mixture, alternating with the milk.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Cool the cake in the pan for 10 minutes before transferring to a wire rack.
  11. Dust with powdered sugar before serving if desired.
