A delightful vegan coffee cake made with pistachios, perfect for brunch or an afternoon treat.

Ingredients

  • 1 cup pistachios, shelled
  • 1 1/2 cups all-purpose flour
  • 1 cup almond milk
  • 1/2 cup coconut oil, melted
  • 1 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Blend the shelled pistachios until finely ground.
  3. Combine the ground pistachios with all-purpose flour, baking powder, baking soda, and salt.
  4. Mix the almond milk, melted coconut oil, maple syrup, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared cake pan, spreading it evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Allow the cake to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For additional flavor, add a pinch of cinnamon or nutmeg. You can also substitute coconut oil with olive oil for a different taste.
