A vibrant and colorful cake that is a celebration in every slice, perfect for birthdays and special occasions.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 6 large eggs (separated, with egg whites whipped to peaks)
  • Red, blue, green, yellow, orange food coloring
  • Gold sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy, about 3-5 minutes. Add egg yolks one at a time, beating well after each addition.
  3. Mix in the milk and vanilla extract until combined. In another bowl, combine the flour, baking powder, and salt, then gradually stir this into the creamed mixture until smooth.
  4. Beat the egg whites until stiff peaks form and gently fold into the batter.
  5. Divide the batter into six parts and add different food coloring to each.
  6. Pour each colored batter into the prepared pans in layers to create the rainbow effect.
  7. Bake for 25-30 minutes, until a toothpick comes out clean. Cool in pans for 10 minutes, then remove and cool completely on wire racks.
  8. Layer the cakes with frosting in between each layer and decorate the top with gold sprinkles.

Notes

Keep cakes completely cool before frosting to prevent melting. For vibrant colors, use gel food coloring.
