A warm and comforting rice pudding infused with spices and cherries, made effortlessly in a pressure cooker.

Ingredients

  • 1 cup Arborio rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup cherries (fresh or frozen)
  • Pinch of salt

Instructions

  1. In your pressure cooker, combine Arborio rice, milk, sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt.
  2. Stir well to ensure all the ingredients are harmoniously blended.
  3. Close the lid securely on your pressure cooker and set it to cook on high pressure for 15 minutes.
  4. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  5. Open the lid and gently stir in your cherries.
  6. Serve the rice pudding warm, garnished with additional cherries if desired.

Notes

For a creamier pudding, consider using whole milk. Leftovers can be stored in the fridge for up to 3 days.
