A creamy and rich soup made with rotisserie chicken, mushrooms, and a handful of ingredients, perfect for a weeknight dinner or cozy lunch.

Ingredients

  • 1 rotisserie chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add sliced mushrooms and cook until softened.
  3. Stir in the shredded rotisserie chicken, thyme, salt, and pepper.
  4. Pour in the chicken broth and bring to a simmer.
  5. Reduce heat, add the heavy cream, and cook for an additional 5 minutes.
  6. Serve hot with crusty bread.

Notes

Feel free to add vegetables like carrots or spinach for added nutrition. For a thicker soup, mix a tablespoon of cornstarch with water and stir it in before adding the cream.
