A hearty and flavorful breakfast skillet featuring crispy potatoes, bacon, colorful veggies, eggs, and melted cheese.

Ingredients

  • 4 large eggs
  • 1 cup diced potatoes
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown and tender, about 10 minutes, stirring occasionally.
  2. Add chopped bacon, bell peppers, and onions to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Create 4 wells in the mixture and crack an egg into each well. Reduce heat to low and cover the skillet. Cook until the eggs reach desired doneness, about 5-7 minutes.
  4. Sprinkle shredded cheese over the top of the skillet and cover until melted.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes

For a vegetarian option, omit the bacon and add extra vegetables. Leftovers can be stored in an airtight container for up to 3 days.
