Delicious caramels infused with the vibrant flavors of cranberries and pomegranates, perfect for gifting or enjoying on your own.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/2 cup heavy cream
  • 1/2 cup pomegranate juice
  • 1/2 cup fresh cranberries (chopped)
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the sugar, corn syrup, and pomegranate juice in a saucepan over medium heat. Stir until the sugar dissolves.
  2. Bring the mixture to a boil and cook without stirring until it reaches 250°F (hardball stage).
  3. Stir in the heavy cream, butter, and chopped cranberries.
  4. Continue to cook until it reaches 260°F (firm ball stage).
  5. Remove from heat and stir in vanilla extract and salt.
  6. Pour the mixture into a greased 8×8-inch pan and let it cool completely.
  7. Cut into squares and wrap in wax paper.

Notes

Store in an airtight container at room temperature for up to two weeks. For longer storage, refrigerate but let them come to room temperature before eating.
