Delightful cookies combining the sweetness of honey and crunchy pistachios, topped with a sprinkle of sea salt.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup honey
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup pistachios, chopped
  • Sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and honey until smooth.
  3. Beat in the egg until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the chopped pistachios.
  7. Drop generous scoops of dough onto a lined baking sheet.
  8. Sprinkle with sea salt before baking.
  9. Bake for 10-12 minutes or until golden brown.
  10. Cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze unbaked cookie dough for longer storage.
