A rich and creamy seafood chowder, brimming with the catch of the day, perfect for warming evenings and creating cozy memories.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 4 cups seafood stock or fish stock
  • 1 cup heavy cream
  • 1 cup mixed seafood (shrimp, clams, mussels, or fish)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until soft, about 3-5 minutes.
  2. Add the diced potatoes and pour in the seafood stock. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  3. Stir in the heavy cream and mixed seafood. Cook for another 5-7 minutes, until the seafood is cooked through.
  4. Season the chowder generously with salt and pepper, tasting as you go.
  5. Garnish with chopped fresh parsley before serving.

Notes

Taste and adjust seasoning throughout the cooking process. For a lighter version, substitute half-and-half for the heavy cream or use coconut milk for a dairy-free option.
