A delightful one-pan dish featuring tender chicken, creamy sauce, and fresh ingredients, perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  3. Add garlic to the same skillet and cook until fragrant, about 1 minute.
  4. Add cherry tomatoes and spinach, cooking until the spinach wilts.
  5. Stir in the heavy cream and Parmesan cheese, mixing until smooth.
  6. Add the cooked pasta to the skillet and toss to combine.
  7. Top with sliced chicken and garnish with fresh basil before serving.
