A delightful one-pan meal combining tender chicken thighs, broccoli, and creamy cheddar orzo, perfect for weeknight dinners.

  • 4 chicken thighs
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken thighs with salt, pepper, and garlic powder. Add to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
  2. Remove chicken from the skillet and set aside.
  3. In the same skillet, add chicken broth and bring to a boil. Stir in orzo and broccoli.
  4. Reduce heat and simmer, covered, for about 10-12 minutes or until orzo is tender.
  5. Stir in shredded cheddar cheese until melted.
  6. Return chicken thighs to the skillet to heat through before serving.
