  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat your smoker to a steady 225°F (107°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, ketchup, Worcestershire sauce, mustard, salt, black pepper, and smoked paprika. Mix well.
  3. Form the mixture into a loaf shape and place it on parchment paper.
  4. Carefully place the meatloaf in the preheated smoker and cook for about 2-3 hours, until the internal temperature reaches 160°F (71°C).
  5. Brush the meatloaf with barbecue sauce in the final 30 minutes of smoking.
  6. Once done, let the meatloaf rest for 10-15 minutes before slicing.

Notes

For added moisture, consider adding grated zucchini or cheese to the mixture, and use a sharp knife when slicing after resting.
