These Southwest Chicken Wraps combine shredded chicken, black beans, corn, and vibrant spices for a quick and satisfying meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1/2 cup diced red bell pepper
  • 1/4 cup red onion, diced
  • 1/2 cup shredded cheese (cheddar or pepper jack)
  • 1/4 cup cilantro, chopped
  • 1/4 cup ranch dressing or spicy southwest dressing
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, cheese, cilantro, and dressing. Mix well and season with salt and pepper to taste.
  2. Place a portion of the mixture in the center of each tortilla.
  3. Fold in the sides and roll the tortilla tightly to create a wrap.
  4. Slice in half and serve immediately, or wrap in foil for later.

Notes

If you have leftovers, wrap them in foil or plastic wrap and store them in the fridge for up to 2-3 days. Reheat in the microwave or enjoy cold.
