Spicy, creamy stuffed peppers filled with tender chicken and topped with melted cheese, perfect for gatherings.

  • 4 large bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and sliced green onions. Season with salt and pepper.
  4. Stuff each bell pepper with the buffalo chicken mixture.
  5. Drizzle the stuffed peppers with olive oil and sprinkle the remaining cheddar cheese on top.
  6. Cover the dish with foil and bake for 25-30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until tender and bubbly.
  8. Serve hot and enjoy!

Notes

Make sure to pack the filling for maximum flavor. You can substitute rotisserie chicken for the cooked shredded chicken to save time.
