  • 2 tbsp olive oil
  • 1 lb chicken breast, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 23 tbsp chipotle sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Sauté the chicken in olive oil over medium heat with salt and pepper until browned.
  3. Add the diced onion and minced garlic to the skillet; sauté until the onion is translucent.
  4. Stir in the heavy cream, diced tomatoes, and chipotle sauce. Bring to a simmer.
  5. Mix in the cooked pasta and shredded mozzarella cheese until well combined and heated through.
  6. Serve hot, garnished with chopped cilantro.

Notes

For a veggie-packed version, toss in bell peppers, spinach, or zucchini. Adjust the chipotle sauce for your heat preference.
