A vibrant and comforting dish featuring poached eggs in a spicy tomato sauce, perfect for breakfast or brunch.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 4 eggs
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced tomatoes along with the chili powder and paprika. Let simmer for 10 minutes.
  5. Create small wells in the sauce and crack an egg into each well.
  6. Cover with a lid and cook until the eggs are set to your liking, about 5-7 minutes.
  7. Season with salt and pepper to taste, and garnish with fresh parsley. Serve hot!

Notes

Use fresh tomatoes when in season for the best flavor. Adjust the spice level by altering the chili powder.
