  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk

  • Zest of 2 limes

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Green food coloring (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the buttermilk, lime juice, and lime zest until well combined. Add green food coloring if desired.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Dust with powdered sugar before serving.
