A vibrant cake combining soft vanilla cake with colorful Lucky Charms and a creamy green frosting, perfect for St. Patrick’s Day celebrations.

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup mini marshmallows
  • 1 cup Lucky Charms cereal
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons milk
  • Green food coloring
  • Whipped cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line your cake pan.
  2. In a mixing bowl, combine the vanilla cake mix, eggs, vegetable oil, and water. Whisk until smooth.
  3. Gently fold in the mini marshmallows and Lucky Charms cereal.
  4. Pour the batter into your prepared pan and bake according to package instructions, about 25-30 minutes.
  5. Let the cake cool completely in the pan before transferring it to a wire rack.
  6. For the frosting, beat the softened butter until creamy, gradually add powdered sugar and milk to achieve a desired consistency.
  7. Add green food coloring to the frosting and mix well.
  8. Once the cake is cool, generously frost it with green frosting and top with extra Lucky Charms or whipped cream if desired.

Notes

For extra flavor, consider adding a teaspoon of vanilla extract to the frosting. Use room temperature eggs for a fluffier cake.
