This moist and zesty lemon loaf captures the essence of your favorite coffee shop treat, topped with a delicious lemon glaze.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat your oven and prep your pan by greasing a loaf pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time, beating well after each addition.
  4. Combine with sour cream, lemon juice, lemon zest, and vanilla extract.
  5. Mix your dry ingredients: flour, baking powder, baking soda, and salt.
  6. Combine wet and dry mixtures gently until just combined.
  7. Prepare for baking by pouring the batter into your prepared loaf pan.
  8. Bake for 45-50 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
  10. Drizzle the glaze made of powdered sugar and lemon juice on top.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
