A delightful loaf combining ripe bananas and fresh strawberries, perfect for breakfast or dessert.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas with the melted butter.
  3. Add the baking soda and salt, then mix in the sugar, beaten egg, and vanilla extract.
  4. Stir in the flour until just incorporated.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into a greased loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool before slicing.

Notes

Store in an airtight container for up to three days. Can be frozen for up to three months for longer storage.
