Delicious cookies combining the creamy goodness of cheesecake with strawberry jelly, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberry jelly or jam
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until creamy and smooth.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
  7. Create indentations in the center of each cookie using your thumb or a spoon.
  8. Fill each indentation with a small amount of strawberry jelly.
  9. Beat the softened cream cheese and powdered sugar together until smooth.
  10. Spoon the cream cheese mixture on top of the jelly in each cookie.
  11. Bake for 10-12 minutes until the edges are lightly golden.
  12. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to 5 days or freeze for up to a month.
