  • 1/2 cup cream cheese, softened
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners to keep your muffins from sticking.
  2. Beat together the softened cream cheese and sugar until smooth.
  3. Add in the vegetable oil, vanilla extract, and egg, mixing until well combined.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the diced strawberries gently.
  7. Fill the muffin cups with the batter, about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
