  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix the flour, sugar, baking powder, and salt in a bowl.
  3. Beat the cream cheese until smooth, then add the milk, vegetable oil, egg, and vanilla extract; mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the chopped strawberries gently.
  6. Divide the batter among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.
