Strawberry Shortcake Brownies

Delicious brownies combined with fresh strawberries and whipped cream, perfect for summer.

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped fresh strawberries
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in the chopped strawberries to the batter. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely in the pan.
  6. Whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  7. Serve the brownies cool, cut into squares, topped with whipped cream and additional strawberry slices if desired.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
