Delightful, bite-sized truffles capturing the flavors of strawberry shortcake, coated in silky white chocolate.

Ingredients

  • 1 cup strawberries, hulled and chopped
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed shortbread cookies
  • 1 cup white chocolate chips
  • Sprinkles (optional) for coating

Instructions

  1. Whip the heavy cream until soft peaks form.
  2. Mix the cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in the whipped cream and chopped strawberries into the cream cheese mixture.
  4. Stir in the crushed shortbread cookies.
  5. Shape the mixture into small balls and place them on a baking sheet.
  6. Chill in the refrigerator for about 30 minutes to firm up.
  7. Melt the white chocolate chips until smooth.
  8. Dip each truffle in the melted chocolate, adding sprinkles if desired.
  9. Refrigerate until set, then enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. Can be frozen for up to two months.
