Ingredients

Scale
  • 2 cups strawberries, sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold, diced
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Combine sliced strawberries and sugar in a bowl. Set aside to macerate.
  2. Preheat the oven to 425°F (220°C).
  3. Mix flour, baking powder, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in heavy cream and vanilla until just combined.
  5. Turn the dough onto a floured surface and knead gently. Roll out and cut into rounds.
  6. Place rounds on a baking sheet and bake for 12-15 minutes until golden.
  7. Let the cakes cool slightly, then slice in half.
  8. Layer strawberries and whipped cream between the halves, topping with more strawberries and whipped cream before serving.

Notes

For best results, use fresh, ripe strawberries. Don’t overmix the dough and consider adding lemon zest for extra flavor.
