A vibrant and flavorful bowl featuring tender chicken, sweet corn, and fresh veggies all on a bed of warm rice.

Ingredients

  • 2 cups cooked rice
  • 1 pound cooked chicken, shredded
  • 1 cup corn kernels (fresh or canned)
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Sour cream for serving (optional)

Instructions

  1. Combine the cooked rice, shredded chicken, corn, and diced red onion in a large bowl.
  2. Add the lime juice, chili powder, salt, and pepper and mix well.
  3. Serve the mixture in bowls and top with sliced avocado, halved cherry tomatoes, and fresh cilantro.
  4. If desired, add a dollop of sour cream on top before serving. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
